a recipe for you!

So the other day I found a great recipe for Mexican Lasagna on the At home with the Farmer’s wife blog. Though I changed things up a bit. You can def follow her recipe I’m going to share my changes to the recipe and let you decide what version to use.

I adjusted mine a bit for a 9×13 pan. and added some more yumminess.

Ingredients:

12 whole wheat tortillas

2 (small) cans of chopped green chilis

1 can of enchilada sauce

2 cans of re-fried beans (i used low fat)

2 packages of taco seasoning

2 cloves of garlic

1 package of cream cheese (softened)

1 container (16 oz) of sour cream.

small amount of oil for frying.

2 lbs of ground hamburger (i used ground turkey)

12-16 oz of sharp cheddar cheese grated

extra sour cream and salsa for on top!

Directions:

Brown meat in pan and add 1 pack of taco seasoning and mix to directions on the package.  In another  skillet put the oil and crisp up the tortillas.  place them on plate to cool. Place sour cream and cream cheese in a bowl. Add to that the other taco seasoning packet and the garlic (grated, pressed or finely chopped) Mix together thoroughly and set aside for later. Put 1/2 the can of enchilada sauce in the bottom of your pan, spread evenly. Top with 3 tortillas. (rip one of them to fit the pan) Next layer is 1/2 of meat and spread one can of green chilis over the meat.  3 more tortillas. Topped with the sour cream mixture. Spread the re-fried beans on top (it gets a smooshed together but that’s ok) Sprinkle  cheddar cheese on top. 3 more tortillas. Add the last of the meat and top it off with the last 3 tortillas. spread the last 1/2 of the enchilada sauce on top of the tortillas and bake at 350 degrees  for 30-35 min. the last 5-10 min top with rest of cheese till nice and bubbley.

cut and serve topped with some salsa and sour cream. ENJOY!
